Lemon & Poppy Seed Cake

3 c. all-purpose flour (or 50% whole wheat pastry flour)
1/2 cup date sugar
1/2 cup Florida Crystals or Sucanat (sugar)
1/2 tsp. salt
2 Tbsp. baking powder
2 tsp. lemon juice
2 tsp. vanilla
1 tsp. lemon extract
1 tsp. lemon peel
1/3 cup vegetable oil
1/3 cup applesauce
2 cups plus 2 Tbsp. cold water
1 - 2 Tbsp. poppy seeds

Mix ingredients well. Pour into a prepared cake pan and bake at 350 degrees for 30 - 35 minutes.
