Carob Wacky Cake

3 cups all-purpose flour (may use 50% whole wheat pastry flour)
1/2 cup date sugar
1/2 cup Florida Crystals or Sucanat (sugar)
2/3 cup roasted carob powder
1/2 tsp. salt
2 Tbsp. baking powder
2 tsp. lemon juice
2 tsp. vanilla
1/3 cup vegetable oil
1/3 cup lemon juice
2 cups cold water

Mix ingredients together well. Pour batter into prepared cake pan. Bake at 350 degrees for 30 minutes or until done.
