 I made these for supper tonight. They are very tasty! And so simple.

RED LENTIL WAFFLES:

Soak two cups of red lentils in an equal amount of water for 10 minutes. Drain. Place equal amounts of soaked red lentils and water into a VitaMix and blend. Add salt to taste. Blend until very smooth. Prepare a hot waffle iron with oil so batter does not stick. Fill waffle iron with batter and bake until the light on the waffle iron goes off. Remove and serve. I serve this as a savory dish and use golden gravy as a topping. But it would be equally delicious with peanut butter, maple syrup, and/or berries and whipped cashew cream! Enjoy!
