Traditional Pecan Loaf
Traditional Pecan Loaf 1 onion, chopped 2 stalks celery, chopped olive oil1 1/2 cups pecans, finely chopped 3 cups bread crumbs (gluten free if necessary) 2 cups soy milk (or other milk alternative) 3/4 cup rolled oats (gluten free if necessary) 1/4 tsp. sagesalt to taste In a frying pan, saute' onions and celery in the vegetable oil. In a mixing bowl, mix all ingredients together. Spoon into casserole dish and bake uncovered at 325 degrees for 30 - 40 minutes.Remove from oven. Unmold if desired and place on platter. Slice, then garnish with parsley sprigs.
