Tarragon Butter


Tarragon butter makes a tasty spread for crackers, dinner rolls, or cooked vegetables. Try it as a delicious addition to your Valentine's dinner. This recipe calls for fresh or dried herbs, so it adaptable to all seasons.

1 cup Earth Balance margarine*
2 Tbsp. minced fresh or 2 tsp. dried tarragon
2 Tbsp. minced fresh or 2 tsp. dried parsley
1 tsp. fresh or dried chives
1 garlic clove, minced or pressed

Combine all ingredients in a bowl until smooth and well blended. Store in a refrigerator until ready to use. Serve with crackers, breads, or with cooked vegetables. Yum!

*Of course other margarines or butters can be used, but Earth Balance has a terrific flavor and is heart-healthy, containing no saturated or trans fats.
