Thai-Style Cabbage Salad
1 tablespoon fresh lemon juice
1 teaspoon sugar (or stevia to taste)
3/4 teaspoon salt
3 cups cabbage, finely shredded
1/2 small red onion, thinly sliced
1/3 cup carrot, grated
2 tablespoons fresh mint leaves, finely chopped
2 tablespoons fresh coriander, chopped
1 tablespoon olive oil
In a bowl stir together the lemon juice, sweetener, and the salt. Add the cabbage, onion, carrot, mint, coriander, and oil. Toss salad until well mixed. Enjoy!
Serves 2.
