Dried-Cherry Scones


Dried-Cherry Scones

2 cups all-purpose flour
1/3 cup sugar
1 Tbsp. baking powder
1 tsp. baking soda
1/2 cup vegetable oil
1/2 cup soymilk plus 1/2 Tbsp. lemon juice, blended
1 1/4 tsp. vanilla
3/4 cup dried cherries
1 tsp. cinnamon

Combine flour, sugar, baking powder, baking soda, and cinnamon in a large bowl. Form a hole in the center and set aside. In a small bowl, mix together soymilk, lemon juice, and vanilla. Pour the liquid ingredients into the dry ingredients. Stir gently with a fork until dry ingredients are just blended. Fold in cherries. Form into 8 - 10 scones and place on a prepared baking sheet.

Bake in a 400 degree oven for 12 - 15 minutes.

Variations: 1 cup whole-wheat flour can be substituted for half the all-purpose flour.

Dried cherries can be found at health food stores or the bulk food section of some markets. They are so sweet and delicious!

our walgreen's carrys a nice selection of dried fruits too! this sounds awesome and going to try it! thank you for sharing:)
