O'Bean Guacamole
O'Bean Guacamole10 ounces small green beans, whole10 ounces baby lima beans1 cup tofu, extra-firm1/2 cup tomato salsa6 Tbsp. lemon juice3 - 4 cloves garlic, crushed2 tsp. salt1 1/2 tsp. cumin, groundCook the beans in separate kettles until just tender. Drain them and place in a food processor. Process until smooth. Add the rest of the ingredients and process again. When smooth, place in a covered bowl and refrigerate or serve with chips or veggies. May be used as spread on crackers or toast tips as well.Makes 4 cups
