Red Lentil Chowder

Red Lentil Chowder

1 cup red lentils, rinsed
3 1/2 cups chicken-style broth
1 onion, chopped
2-3 garlic cloves, pressed
1 medium or 2 small red potatoes, peeled and diced
2 zucchini, diced
dash red pepper flakes
dash cumin
1 tsp. dried chives
salt to taste

Place all in a sauce pan and bring to a boil, simmer on very low for 25- 30 minutes. Serve as is or puree. Enjoy a bowl of hearty soup. Garnish as desired (grated carrot, chopped chives, etc.).
