2 cups raw apple cut into small cubes
3 Ener-G egg replacer
1/2 cup sugar
1/3 cup oil
1/2 cup chopped walnuts
1 tsp vanilla
1/2 cup rice flour
1/2 tsp cinnamon
pinch of salt
1/4 tsp baking soda
1. Preheat oven to 350 F (175 C).
2. Grease 8" (20 cm) cake tin.
3. Lightly beat Ener-G egg replacer according to instructions on package.
4. Combine apple, egg substitute, sugar, oil, walnuts, and vanilla.
5. Sift flour, cinnamon, salt and baking soda. Add flour mixture to apple
mixture and mix well.
6. Pour into prepared tin. 7. Bake for approximately 60 minutes.
