Tamale Pie
2 1/4 ounce can sliced olives2 Tbsp. water or olive broth1 small onion, chopped1 clove garlic, minced3 cups chopped, stewed tomatoes1 cup slightly blended, whole kernel corn3/4 tsp. ground cumin3/4 tsp. oregano1/2 tsp. garlic powder1/2 tsp. salt2/3 cup fine yellow cornSimmer first 4 ingredients 2 - 3 minutes. Stir in remaining ingredients, except cornmeal, and cook for 5 minutes. Stir in cornmeal and simmer over low heat for 10 minutes. Place in a 9" pie plate and bake at 325 degrees for 30 - 45 minutes. Watch to avoid drying out.Serves 9
