*garlic-potato sauce or dip*2 large baking potatoes3 large garlic cloves1/2 cup olive oil3/8 cup lemon juiceBoil the 2 potatoes in salted water until boiled. In a blender or food processor, chip garlic. Add hot potatoes and process. Add oil and lemon juice and bend until smooth. Add salt to taste.This recipe is especially good served on fresh or boiled beet slices, fried eggplant, or zucchini.
