Chickpea Spread
Mash a can of chickpeas with a potato masher or by gently whizzing in a food processor. Add a dab of Veganaise, a dollop of mustard, some pickle relish, some chopped green onions, and some chopped parsley. Blend until creamy and smooth and serve on toast or crackers. Also delicious on a lettuce leaf as a salad.***Add dill or finely chopped celery for variation.
I tried this as a quick and easy snack this weekend. Absolutely delicious!!
